Smoked endive cannelloni

INGREDIENTS:
Endive
Smoked tuna
Smoked salmon
Smoked eel
Sheep’s ricotta
Celery, Carrots, Leek
Fennel, Peppers
Basil, Parsley
Pine nuts, olive oil, salt, pepper

PREPARATION:
Filling: Create a mince of pine nuts, basil, parsley, seasoned with oil, salt and pepper; cut the smoked slices into strips and combine everything with ricotta to form a filling, then stuff the endive leafs as if to form cannelloni.
Side: dice and sauté celery, carrots, leek, fennel and peppers with oil, salt and pepper.
Finally, place the previously prepared cannelloni on top of the sauté vegetables and serve.




Seafood ravioli

INGREDIENTS:
Seafood
Puff pastry
Potatoes
Cherry tomatoes
A glass of white wine
Olive oil
A clove of garlic
Salt, ground black pepper and parsley

PREPARATION:
Filling part: Peel and boil the potatoes cut into pieces, in the meantime in another pan heat the extra virgin olive oil with a clove of garlic cut into small pieces and before garlic become browns put in also the seafood with the cherry tomatoes , then keeping the flame always high, blend with a glass of white wine, as soon as the alcohol evaporates, lower the flame to minimum and close the pan with a lid for a few minutes.
Once cooked, keep some of the whole seafood for the side dish and lightly blend the rest of the seafood together with their sauce, press the boiled potatoes separately, and finally combine everything with the help of a couple of spoons until you create a mixture, adjusting with salt, black pepper and a little parsley.


Final cooking: We prepare the puff pastry and form the ravioli with our filling, we dip the ravioli in the already boiling lightly salted water and as soon as the first ravioli come to the surface we drain them all immediately from the cooking water and plate together with the part of the whole fish kept from the filling, serve hot.


Spaghetti with tuna

INGREDIENTS:
Spaghetti
tuna
pieces of tomatoes
onion
garlic
oregano
oli, salt, black pepper

And optionally:
anchovies
Caciocavallo or Parmesan cheese

PREPARATION:
Brown onion and a crushed garlic clove with a little oil.
Remove garlic and add the chopped tuna, after add the chopped tomatoes, salt it and add oregano at will (Optionally you can add to the tuna sauce, a little of anchovies).
Cook over low heat, stirring for about 30 minutes.
Meanwhile, cook Spaghetti separately and after, when tuna sauce is cooked, combine it all.

(Optionally when the dish is on the table, you can cover all with grated cheese)
